Following high school, he continued his education at the University of San Diego, where he played college baseball for the San Diego Toreros.

During his time at the University of San Diego, Connor Joe participated in collegiate summer baseball leagues, playing for teams such as the Kelowna Falcons and the Duluth Huskies.
