Jacob Michael Bischoff was born on July 25, 1994, in Cambridge, Minnesota, as the oldest child of Jackie Tok and Grant Bischoff. His father played ice hockey for the University of Minnesota and was drafted by the Minnesota North Stars after his freshman year. This familial connection to hockey provided Jacob with early exposure to the sport, as he was trained by his father from a young age. Tragically, his mother passed away when he was 16, and his father later remarried to Tammi McLaughlin. Jacob’s stepbrother, Blake McLaughlin, also pursued a career in hockey and was drafted by the Anaheim Ducks in 2018. Jacob Bischoff played high school hockey in Minnesota and spent parts of two seasons with the Omaha Lancers in the United States Hockey League (USHL). He then committed to play collegiate hockey for the University of Minnesota. As an alternate captain with the Gophers, he completed a four-year collegiate career, achieving his most productive season during his senior year in 2016-17, where he recorded 5 goals and 27 assists for a total of 32 points in 38 games from the blue line. Originally drafted by the New York Islanders in the seventh round, 185th overall, of the 2012 NHL entry draft, he signed a two-year entry-level contract with the Islanders on March 29, 2017, after his senior season. He immediately joined the Islanders’ AHL affiliate, the Bridgeport Sound Tigers, for the remainder of the regular season, where he posted 3 points in 6 games.

After being drafted, Jacob Bischoff was traded by the Islanders to the Vegas Golden Knights on June 21, 2017, as part of a deal that included Mikhail Grabovski and draft selections. He joined the Golden Knights in their inaugural season, playing for their AHL affiliate, the Chicago Wolves, during the 2017-18 season. On July 16, 2019, he signed a three-year contract extension with the Golden Knights as a restricted free agent. Unfortunately, Bischoff missed the entire 2021-22 season due to a lower body injury. However, he opted to remain with the Golden Knights organization by signing a one-year AHL contract with the Henderson Silver Knights on July 14, 2022. He was later named captain of the Silver Knights on October 12, 2023, succeeding Brayden Pachal.
