Despite being rated as a two-star recruit, he committed to Louisiana-Monroe to continue his football career. During his first season, he redshirted, which allowed him to develop his skills further. In his second year, as a redshirt-freshman, he played in 11 games, registering 12 catches for 136 yards. He continued to build on his performance in the following season, again making 12 catches in 11 games.

In his junior year at Louisiana-Monroe, Josh Pederson achieved significant recognition by being named First-team All-Sun Belt after posting 43 receptions for 567 yards and nine touchdowns.
