He attended Ashwaubenon High School and later transferred to Notre Dame Academy, where he continued to hone his skills. During his freshman year at Ashwaubenon, he was the third-leading scorer with 15 goals and 23 assists. In 2011, he moved to Notre Dame Academy, where he played alongside his cousin Collin for the Tritons. During that season, he helped the Tritons win their first state championship by scoring the decisive goal in double overtime against Wausau West.

Mason Appleton began his professional career when he signed a three-year entry-level contract with the Winnipeg Jets in 2017. He attended the Jets’ training camp before the 2017–18 season and was reassigned to their American Hockey League (AHL) affiliate, the Manitoba Moose. Appleton quickly moved up the depth chart, starting the season centering the Moose’s fourth line before becoming a left winger on the top line. On October 21, 2017, he recorded his first career AHL goal on the power play as the Moose defeated the Iowa Wild. His impressive performance led to him being named CCM/AHL Player of the Week in November 2017. By April 2018, he had set franchise records for assists and points by a rookie, leading all AHL rookies in scoring.
