Watson played for the North Dakota State Bison, where he redshirted his freshman season. As a redshirt freshman, he caught nine passes for 165 yards, contributing to the Bison’s victory in the 2018 FCS national championship. In his redshirt sophomore year, Watson caught 34 passes for 732 yards and six touchdowns, earning second-team All-Missouri Valley Football Conference (MVFC) honors. His redshirt junior season was impacted by the COVID-19 pandemic, but he still managed to catch 19 passes for 442 yards and one touchdown, receiving first-team All-MVFC and first-team All-American honors as an All-Purpose player. In his redshirt senior season, Watson caught 43 passes for 801 yards and seven touchdowns, repeating as a first-team All-MVFC selection and earning second-team All-American honors. Christian Watson was selected as the second pick of the second round (34th overall) in the 2022 NFL draft by the Green Bay Packers, making him the seventh wide receiver selected in that draft.
